Cooking at Home With Carolyn – Episode 1

Now that it’s been 2 weeks since working from home became the new norm, I am starting to realize that being at home has me wanting to munch on and eat not the healthiest items in the pantry. With the majority of the stores being completely wiped out of cheese doodles and canned soup… I started to realize it might be that time to grab some fresh veggies and meat and start cooking more. I mean we are home ALL day now.

Here are some of my favorite recipes to cook in under 30 minutes and with some fresh veggies ????

Sweet & Sour Pork Bowl (for 2-3 people)

Ingredients:
1lb ground pork
½ cup rice (because all the rice was out at the store, we picked up a box of cilantro rice)
6oz of sweet pepper
1 bell pepper
1 lime
1 bunch of cilantro
2 tbsp sesame oil
2 tbsp soy glaze ( because that was also out at the store; we subbed it for dumpling sauce)
1 piece of ginger

Step 1: Cut the peppers to about dime size; they can be a little bigger – but you want them chopped to a good size

Step 2: Cook down the rice- we just followed the instructions on the box- but if you are cooking with jasmine rice, you want to add a pinch of salt and about 1 cup of water with the rice. Once you have a boil- reduce heat and cover with lid – don’t forget to fluff the rice every once in a while, so it doesn’t stick to the bottom.

Step 3: Cook the peppers. While the rice cooks down, add the peppers to a medium skillet with a drizzle of olive oil. Use a nonstick pan if you have one. On medium high heat – add the sweet pepper and bell peppers with some salt and pepper. Use the lime to squeeze about 1 lime edge worth over the peppers while they are cooking.

Step 4: Cook down the pork. Season with salt and pepper. Cook until lightly brown. Add in as much ginger as you deem necessary. We cut up about (2) 1” pieces. Add in the Soy glaze, and sesame oil. Cook until fragrant.

Step 5: Plate your dish, add some fresh cilantro on top and enjoy!
